Polish 'Pyzy' (Potato dumplings)

Ingredients:
- 2 and 1/2 lb peeled Russet potatoes
- 2 eggs
- 8 ounces all-purpose flour (or more as necessary)
- 1 tablespoon potato flour
- 1/2 teaspoon salt (or to taste)
- 5 ounces of bacon

Preparation:
- Cube half the potatoes, leaving the rest whole.
- Boil the cubed potatoes in salted water until tender.
- Next, great whole, raw potatoes with a fine mesh grater. Place the grated, raw potatoes on a linen towel or several layers of cheesecloth. Wrap and twist, squeezing the cloth over a bowl to wring all the water out of the potatoes.
- Drain the water.
- Drain and mashed the cooked potatoes and place in a large bowl. Add the grated, drained raw potatoes.
- Add eggs, salt and flour, and combine thoroughly, adding enough flour so the mixture will hold its shape when rolled. v - Using slightly dampened or floured hands, roll spoonfuls of the dough into balls.
- Bring a large saucepan of salted water to a boil and drop in the dumplings.
- Cook 4 to 5 minutes or until the dumplings float to the top.
- Remove dumplings with a slotted spoon to a colander to drain.
- Meanwhile, cut the bacon into cubes and fry until they are golden brown.
- Transfer the cooked dumplings to a serving plate and spoon over the bacon and drippings.
