Polish Bigos

Ingredients:
1/2 medium cabbage, washed and thinly sliced
4 cups of sauerkraut
1 can tomato paste
1/2 lb bacon, sliced
1 lb pork, diced
1 lb Kielbasa, sliced (or substitute with a quality sausage from your butcher)
1 large onion, diced
2 cloves garlic, minced
1 bay leaf
Two tablespoons of cooking oil or butter
Salt and pepper to taste

In the spirit of a stew, any meat you have on hand may be substituted for any of the ones listed above.

Preparation:
In a large pot, boil the cabbage until tender.
In a separate pot, boil the sauerkraut in about 2 cups of water.
Strain, reserving the water and setting both aside.
Sauté the diced pork in a large saucepan with butter or oil, then set aside.
In the same saucepan, sauté the bacon and sausage with the onion and garlic.
In a large pot, combine the cooked cabbage, sauerkraut, sauerkraut water, tomato paste, spices, meats, onions, and garlic.
Let simmer for about 1 hour.

Enjoy, Nightrunner.
